French Toast


Italian Bread                                                             6 slices

Eggs                                                                          3

Milk                                                                             1 cup

Nutmeg                                                                     tsp

Vanilla                                                                       1 tsp

Salt                                                                             tsp

Sugar                                                                         3 tbsp


Add eggs in as it gets used up, not all at once.

Bisquick Pancakes


Bisquick baking mix                                              2 cups

Eggs                                                                          2

Milk                                                                             1 cup



Beat all ingredients with hand beater until smooth.  Pour cup onto hot griddle.  Cook until pancakes are dry around the edges.  Turn and cook other side until golden brown.  Makes 10 to 13 pancakes.


Berry Pancakes: add 2 tbsp of sugar and 1 cup of berries

Banana Oatmeal Muffins


Rolled Oats                                                                          1 cups

Flour                                                                                     1 cups

Baking Powder                                                                   5 tsp

Salt                                                                                       1 tsp

Nutmeg                                                                                 tsp

Eggs                                                                                      2

Vanilla                                                                                    2 tsp

Milk                                                                                        1 cup

Sugar                                                                                    1 cups

Baking Soda                                                                        1 tsp

Cinnamon                                                                             tsp

Margarine, melted and cooled to lukewarm                       cup

Mashed ripe bananas                                                          2 cups (approx. 4-5 bananas)

Raisins                                                                                  1 cup

Coconut                                                                                 1 cup


Mix together and bake at 375 for 20-22 min.

Cinnamon Rolls


Flour                                                                          2 cups

Sugar                                                                         2 tbsp

Baking powder                                                       4 tsp

Salt                                                                             1 tsp

Butter, cold                                                              cup


Milk, cold                                                                  1 cup


Butter, softened                                                      1/3 cup

Brown sugar, packed                                           1 cup

Cinnamon                                                                1 tbsp

Raisins, cut up                                                        1/3 cup



In large bowl combine flour, sugar, baking powder and salt.  Cut in first amount of butter until crumbly.  Make a well in center.


Pour milk into well.  Stir to form soft dough adding a bit more milk if needed.  Turn out on lightly floured surface.  Knead 8 to 10 times.  Roll into rectangle about 1 cm thick and 30 cm long.  Width will vary.


Cream second amount of butter, brown sugar and cinnamon together well.  Drop 1 tsp into each of 12 greased muffin cups.  Spread the remaining mixture over dough rectangle.  Sprinkle raisins over top.  Roll like a jelly roll.  Mark first then cut into 12 slices.  Place cut side down on muffin cups.  Bake in 400 F oven for 20 to 25 min.





To cup icing sugar, add enough milk or water to make a thin glaze.  Drizzle over cinnamon rolls.

Plain Yogurt


Mix together in a bowl and serve.  Seems weird but is really quite good.

Sour Cream Pancakes


Cottage Cheese                                                      1 cups

Sour Cream                                                             cup

Salt                                                                             tsp

Eggs, separated                                                     3

Flour, sifted                                                              1 cup

Butter                                                                                    6 tbsp



Combine cottage cheese, sour cream, salt and egg yolks in a medium sized bowl.  Stir in flour until well mixed.  Beat egg whites in small bowl with electric mixer until stiff peaks form; fold gently into mixture.  Melt 2 tbsp of butter on skillet.  Drop mixture in 2/3 cupfuls; flatten with pancake turner for even thickness until golden brown on both sides.  Makes about 12 pancakes
